Mexican Rice

The first time I had Mexican rice was on a date in Vishakhapattanam, India and fell in love with it. It’s really easy to make and brings back some cute memories. Either way, it’s a perfect one pot meal, and any accompaniment is strictly optional.

One of my friends called it hipster Rajma-Chawal which while wrong on many levels isn’t exactly blasphemy. I made this version vegan just for fun, many other recipes use meat like pork or chicken, or perhaps grated cheese. I think the rice tastes pretty damn good on its own, so I decided not to mess with it that much.

This recipe will probably differ from many other recipes, which I honestly have no issue with that, because I am no one to speak for Mexican cuisine. I do enjoy their food though as much of it has flavours like chili, beans, veggies, rice, flatbreads, etc that are very similar to Indian food.
